Our family does not eat fish very often. A big reason for that is my lack of knowledge about cooking fish. But, I have found out how good fish is nutritionally and, surprisingly how tasty it is (once you get past the smell:)).
We thoroughly enjoyed Baked Salmon with steamed broccoli, cauliflower and carrots last night. Best part about this dinner is that it was SCD (Specific Carborhydrate Diet) friendly. So, Daddy got to eat with us!
Here is our recipe. I got it from allrecipes.com, but tweaked it a little.
Baked Salmon
2 cloves garlic, minced
6T extra virgin olive oil
1t dried basil
3/4t salt
1/2t ground black pepper
4T lemon juice
2 (6oz) fillets salmon
In a medium glass bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper and lemon juice. Place salmon fillets in a med. glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees.
Cover dish with aluminum foil. Bake 35-45 minutes until easily flaked with a fork. Enjoy!!

We eat salmon frequently and will have to try this recipe. We also like tilapia which is pretty good and usually much cheaper.
