Our family does not eat fish very often. A big reason for that is my lack of knowledge about cooking fish. But, I have found out how good fish is nutritionally and, surprisingly how tasty it is (once you get past the smell:)).
We thoroughly enjoyed Baked Salmon with steamed broccoli, cauliflower and carrots last night. Best part about this dinner is that it was SCD (Specific Carborhydrate Diet) friendly. So, Daddy got to eat with us!
Here is our recipe. I got it from allrecipes.com, but tweaked it a little.
Baked Salmon
2 cloves garlic, minced
6T extra virgin olive oil
1t dried basil
3/4t salt
1/2t ground black pepper
4T lemon juice
2 (6oz) fillets salmon
In a medium glass bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper and lemon juice. Place salmon fillets in a med. glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees.
Cover dish with aluminum foil. Bake 35-45 minutes until easily flaked with a fork. Enjoy!!
(Next time I'll have to take a picture.)

Camping!
We went camping with my family at Indiana Dunes State Park. The kids got dirty, went on hikes, hunted Snipe, swam in the lake, played in the sand and ate S'mores and Girl Scout pies(yum!).

Sweet Baby is 5 months old
Where has the time gone. Sweet Baby is growing so quickly. At his 4 month check-up he weighed 20lbs and was 26 1/4 in. He has started rolling from his back to his tummy. So, we are watching what we leave on the floor more closely.
Punkin' giving Sweet Baby his first bottle.
Our kiddos really like there Bekah blankets.

Ferdinand Magellan
We read about Ferdinand Megellan for history this week. We learned about the straight named after him, how he never actually circumnavigated the earth (his crew finished the journey for him), and what they ate in South America...penguins. For some reason I never thought of South America as being cold, but it is really close to Antarctica down there. Another great thing about homeschooling...I am learning so much, too!
For a fun project we colored hard boiled eggs to look like penguins (Idea is from Mystery of History 3. Use Sharpie markers...wait until the eggs are room temperature, so they are not wet!). I hid them outside and we hunted them and ate them. Penguins are quite tasty with a little salt.:)
